Without a doubt anything Cedar Point does is going to be over the top and grand, it's the way they roll. I can envision two different parades coming from the wilderness trail and the Gemini Midway, merging into one huge parade heading to the front of the park.
I think Blue Streak and Gemini are both good picks, but for me Iron Dragon may be the coaster that realistically could run that I'd be interested in riding. I imagine going through the snow covered wooden part would be a bit serene and relaxing, then the finale over the water, preferably iced over, would be a nice finish.

I don't "consider" Cedar Point home, but that's because I grew up at Kings Island. And we all know Cedar Point would basically have to be enclosed in a dome to have Winterfest. But now my brain is Thinking.
If Cedar Point ever had Winterfest, I'd imagine their parades and entertainment would be absolutely off the hook. Kids could meet Santa in the front of the park, but I also bet that Frontiertown would be gorgeous during that time of the year. The equivalent rides would be open, but can you imagine Christmas in Boneville? That would be an attraction onto itself.
Coaster wise, Blue Streak and Gemini strike me as ones that would be open no matter what. I bet Gatekeeper wouldn't be atrocious in the cold, and Wild Mouse and the kids' coasters could run. I know better than to try to get on anything bigger than Magnum in that weather.
* Please also imagine unlimited staff and supplies, in addition to the magic dome that prevents lake effect snow from ruining everything.
